I enjoy spending time in the kitchen with our children. Our three oldest are always asking if they can help cook our meals. I have to admit it is much more time consuming...but it is so worth it! I feel like it is part of my duty as a mom to teach them how to care for themselves. So...I put them to work!
With the economy eating away every hard-earned cent our families are blessed to make, we all have to get creative and come up with some budget-friendly meals. Our family seems to run out of certain items before the big shopping day. Here are a few quick and easy substitutes for when you run out of the store-bought stuff.

Dempsey's Quick & Easy Bottom-of-the-Bowl Salsa
1 large (28 ounce) can diced tomatoes, well drained
1 small (10 ounce) can of Rotel (we use mild), well drained
1 cup diced onion1 handful of fresh cilantro (very easy to grow)
1 tablespoon ground cumin
Now, you can adjust onion, cilantro and cumin to your taste.
When I make it, I done even measure, I just throw in and taste until it suits us.Place tomatoes, Rotel, cilantro and cumin in a food processor and pulse to desired chunkiness. Then put into a bowl and add 1 cup of diced onions....stir the onions in and your are ready to serve. This recipe gets rave reviews! Totally quick and easy!
